Maria Figueroa and her husband Victor were refugees from Chile who found their way to Tyneside in 1976 after fleeing Chile. Through Nigel Wild they came into contact with the Red Herring Cafe and became members of the workers’ co-operative who ran it. Food out of Chile contained some of the many Latin American recipes they introduced to the Red Herring as well as a long interview with them on their reasons for fleeing Chile and their involvement in the Red Herring. Food out of Chile is out of print but the Red Herring’s second recipe book, Cordon Rouge, was published by Earthright Publications in 1996, on the Cafe’s tenth anniversary, reprinted in 1998 and still available.Earthright Publications
